Hearty Lentil Soup

This Lentil Soup recipe makes the perfect hearty and healthy meal! It's packed with both flavor and nutrients. 

RECIPE:

1 cup lentils, rinsed

2 cups potatoes, eddoe, plantain, dasheen, or whatever starch you like best (chopped into bite-sized pieces)

3 cups water

1 cup spinach or Chinese cabbage (chopped)

1 can coconut milk

2 onions (chopped)

2 stalks celery (chopped)

4 garlic cloves (minced)

1 teaspoon ground turmeric

Step 1:

Put the rinsed lentils and potatoes in a large saucepan along with 3 cups of water.

Bring to a low boil and cook for 15 minutes.

Step 2:

Once the lentils and potatoes are almost tender, add the spinach, onion, celery, garlic, and turmeric.

Let simmer another 5-10 minutes.

Step 3:

Add the coconut milk and cook for another 4-5 minutes. 

Serve hot with your favorite bread or a green salad.
