This Lentil Rice recipe is a hearty meal that will reduce inflammation and your risk of cancer! It's packed with both flavonoids and nutrients to remove oxidants and bring you better health.
RECIPE:
1/2 lb lentils, rinsed
1 cup basmati rice
3 cups water
1 onion (sliced)
2 carrots (diced)
1/2 cup coconut milk
1 teaspoon ground turmeric
Step 1:
Put the rinsed lentils in a large saucepan along with 3 cups of water. Bring to a low boil and cook until the lentils are about 1/2 cooked (about 10 min).
Step 2:
While the lentils are cooking, fry the onion until brown and crispy. Be careful not to burn the onions.
Step 3:
Add all the ingredients and let simmer for 30-45 min until rice and lentils are tender.
NOTE: You may need to add more water.
Step 4:
Enjoy a nice healthy, delicious, and cancer-fighting meal!
I like to eat it with kale salad or arugula fruit salad.
