Green fig salad is a popular dish here in St Lucia...in fact, it's the national dish!
It's a high fiber, high iron salad that tastes wonderful.
RECIPE:
1 hand green bananas (approx 6-8)
1/2 C saltfish
1/2 C avocado (cubed)
2 T olive oil
3 green onions (chopped)
1/2 C bell pepper (chopped - I like to use different color peppers for color and flavor)
2 T basil (chopped)
1/4 C celery (chopped)
2 T parsley (chopped)
2 T cilantro/shadow beni (chopped)
2 garlic cloves (grated)
1 T lime juice
Step 1:
Prepare the saltfish by boiling it for 15 min and then allowing it to soak in the hot water for another 20 min. Drain and flake.
Step 2:
Cut off both ends of each banana and then cut a slit from end to end along the side.
Boil the green bananas until a fork goes in easily (about 10-15 min).
Let cool and then cut into bite-sized chunks.
Step 3:
Add in all of the remaining ingredients.
Mix well and let sit for 15 minutes so the flavors will blend.
Step 4:
Garnish with cilantro or parsley and enjoy some green fig salad with your friends!
Green bananas contain loads of fiber which is good for people with digestive and bowel problems, especially for those suffering from IBS and constipation.
It is also high in iron and potassium, which helps regulate blood pressure.
Green bananas enable the slow release of sugar which provides greater control over sugar and insulin levels in the body making this salad a great choice for those with diabetes.
And it just tastes great!
