Vibrant Arugula Fruit Salad

Today I’m bringing you a nutritious salad that is high in fiber, Vitamin C, and many other key nutrients.

RECIPE:

1 pineapple (diced)

1 mango (diced)

1 avocado (diced)

1 C arugula

1/2 C pecans (optional)

1/4 C shadow beni or cilantro

Juice from 1 lime

1 T honey

Arugula is a peppery, distinctive-tasting green that is high in calcium, folate, and Vitamins A and C. This delicious green is a nutrient-dense food that is low in sugar, calories, carbohydrates, and fat.

Step 1:

Dice all the fruit. Rinse the arugula. Finely chop the shadow beni. Juice the lime.

Put all ingredients into a bowl and toss well. Enjoy this salad fresh!
