Cocoa Tea

Cocoa tea has long been a favorite drink here in St Lucia and many islands in the Caribbean.

Not only is it very tasty, but it's also a healthy drink!

In the Mayan culture, only royalty was allowed to drink cocoa tea because it was considered a very special drink and only deserved by the high priest and royal family.

RECIPE:

4 C water

1/4 C grated cocoa from a cocoa stick (you can use cocoa powder if you can't get a cocoa stick)

2 cinnamon sticks

1/4 t ground nutmeg

1/2 t ginger powder

3 bay leaves

2 heaping teaspoons arrowroot flour

Step 1:

Put the water on medium heat.

Step 2:

Add the cocoa.

Step 3:

Add the spices.

Step 4:

Let boil for 10-15 minutes.

Step 5:

Add a little water to the arrowroot flour. Stir well. Pour into boiling cocoa while stirring. Let boil another 2-3 minutes.

Step 6:

Enjoy a nice cup of cocoa tea!

The nutritional and mineral content of the arrowroot is quite high. It contains fiber, carbohydrates, fat, protein, vitamins B1, B2, B3, B5, B6, and B9. Minerals include iron, magnesium, manganese, potassium, phosphorus, and zinc.

That's why arrowroot flour is used in St Lucia to make porridge for babies. It will provide you with many of your daily vitamin needs as well. 🙂

Plus, the spices cinnamon, ginger, and bay leaves all have added value in many areas of health and healing.
