Breadfruit salad is a popular dish here in St Lucia because it tastes so nice...and it's good for your body.
It's a naturally low-fat food that is high in protein and vital nutrients.
RECIPE:
3 C breadfruit (boiled or roasted and cut into small chunks)
1/2 C avocado (mashed or diced)
2 T olive oil
3 green onions (chopped)
1/2 C bell pepper (chopped - I like to use different color peppers for color and flavor)
2 garlic cloves (grated)
1/2 t cayenne pepper
Salt and pepper to taste
Step 1:
Roast or boil the breadfruit. If you need instructions, you can find them here. Let cool and then cut into bite-sized chunks.
Step 2:
Add the remaining ingredients and stir well. Let chill for at least one hour.
Step 3:
Enjoy some nice and healthy breadfruit salad with your favorite meat (or just by itself).
In addition to being high in protein, breadfruit contains a significant amount of polyunsaturated fat (which is very healthy) and amino acids which can’t be produced by the human body.
There is less than one gram of fat in a cup of breadfruit, making this a naturally low-fat food which makes it a good choice for energy without the weight gain.
