Fish Broth – The Meal of the People

Fish Broth (or Fish Head Broth) has long been a favorite dish here in St Lucia and many islands in the Caribbean.

Not only is it very healthy for you because of the nutrients and Omega 3 from the fish, but it's quite tasty!

RECIPE:

2-3 lbs of whole fish or fish heads
(if getting whole fish, leave the head on for best flavor and nutrients)

5 C water (more or less depending on how much broth you like)

2 small dasheen (cut into medium-sized pieces)

4 green bananas (cut into thick slices)

1 onion (sliced or chopped)

4 green onions (chopped)

3 cloves garlic (sliced thin)

4 leaves of shadon beni (also known as wild cilantro)

Juice from 1 freshly squeezed lemon

2 C spinach, kale, broccoli, bok choy, carrots, or whatever vegetables you like

Tumeric and salt to taste

 

Step 1:

Put the fish into a bowl with salt, black pepper, turmeric, garlic, onion, shadon beni, and green onion. Let the fish marinate in the spices while you complete Step 2.

Step 2:

Boil the green banana and dasheen in the water until about half cooked. You should be able to put a fork through but still feel the firmness (approx. 30-45 min).

Step 3:

Set the fish on top of the vegetables. Add your choice of green on top of the fish. Do not stir. Let simmer until everything is tender (about 25-30 min).

Step 4:

Enjoy it!! tongue-out
